Pesto Falso

Pesto is a sauce originating in Genoa in of northern Italy (pesto alla genovese). Pesto in its basic form is basil, garlic, salt, pine nuts and olive oil — that’s it! Making fresh pesto can be a little expensive, so I developed this recipe to help reduce cost, but still retain that great pesto flavor.

Ingredients:

  • 1 cup Cilantro, chopped
  • 4 cloves Garlic, chopped
  • 2 ounces sliced almonds
  • 1 tablespoon dried Basil
  • 2 teaspoons salt
  • 2 teaspoons fresh ground pepper
  • 1 cup olive oil

Directions:

Add cilantro, garlic, basil, salt and pepper to a blender. Blend until well mixed and all ingredients are finely chopped. Next add the almonds and again blend until well mixed and finely chopped. Now drizzle in the olive oil until the pesto reaches the desired consistency. That’s it — enjoy.

Pine Nut Encrusted Salmon Steaks

Overview:

I had some extra pine nuts from a recent baba ganoush and came up with the following recipe. WOW – The flavors explode in your mouth.

Ingredients:

2 8 ounce Salmon steaks
1/3 cup pine nuts
1/4 tablespoon kosher salt
1 tablespoon course ground pepper
1 tablespoon oregano
1 tablespoon basil
3 tablespoons extra virgin olive oil
Cooking spray
Lemon
Lime
Italian Flat Leaf Parsley

Pine Nut Encrusted Salmon Steak

Combine the pine nuts, salt, pepper, oregano and basil in a food processor. Chop until pine nuts are finely chopped. This mixture is very close to a pesto. The mixture should have a paste type texture. Use 2 tablespoons of mixture to coat each salmon steak.

Preheat oven to 400 degrees. In a medium to large skillet heat the olive oil over a medium heat. Add the salmon steaks to the skillet pine nut side down. Cook approximately 3 minutes until pine nuts are browned.

Remove salmon steaks and place in an oven safe Pyrex or similar dish coated with cooking spray. Bake for 10-12 minutes until salmon flakes with a fork.

Plate and garnish with finely chopped parsley and a lemon and a lime wedge.
