Hi, I’m Chef Stacy, also known as 3Monkeys. I love to cook. Wow! What a surprise, huh? What I like about cooking is the experimentation and all the cool gadgets, knives and such. Trying a particular ingredient in a variety of scenarios, experimenting with various methods of cooking a particular ingredient, pairing flavors. I rarely ever make the same dish twice, always tweaking and experimenting with different spices or ingredients. Say a recipe of mine calls for horseradish, I might substitute wasabi the next time I prepare the dish.

One thing I’m known for is spicy dishes. I usually grow my own peppers every year. Usually 10 to 20 different varieties, and usually not common peppers like Jalapenos, but rather more interesting peppers such as Scotch Bonnets, Tabascos, Naga Jolokia, Jamaican pepper and Savannah Red Habaneros . I eat Habaneros of the bush. Capsaicin the chemical in peppers that contributes to there “heat” is a really interesting chemical. It produces endorphins and it helps promote heart health. One interesting thing about capsaicin is that a tolerance to the heat can be built over time. One thing to remember if you are a capsaicin virgin is milk or dairy products reduces the burning sensation, not water or beer. Water and beer both actually increase the burn by distributing the chemical over a wider area of your tongue.

I have a mantra that anyone that knows me can complete after I say the first four words, “Tabasco goes on anything…”. The finishing words of the mantra? “except for cake and ice cream.” Now I don’t put Tabasco in all of my dishes, but I would if it was only for me.
