Tip: Home Made Non-Stick Coating

Ingredients:

1 cup of vegatable oil
1 cup of shortening
1 cup of flour

Directions:

Mix ingredients in a large mixing bowl intil smooth.  Store in an air tight container in the fridge until needed.  Use whenever you need to coat a pan for a cake, muffins or anthing that requires a greased or flour coated pan.

Definition: Grades of Beef

The USDA grade beef at eight  quality grades. The grades are based on two main criteria: the degree of marbling in the beef, and the maturity. US Prime beef is sold to hotels and upscale restaurants. Only 2% of graded beef is Prime.

  • U.S. Prime – Highest in quality and intramuscular fat, limited supply.
  • U.S. Choice – High quality, widely available in food service industry and retail markets.
  • U.S. Select – lowest grade commonly sold at retail, acceptable quality but less juicy and tender due to leanness.
  • U.S. Standard – Lower quality yet economical, lacking marbling.
  • U.S. Commercial – Low quality, lacking tenderness, produced from older animals.

Tip: Knife Care

When moving product across a chopping board or block, use the back-end or flat part of the knife. This wears the blade less and extends the life of the blade.

Cat Cora and Wife Jennifer both Pregnant

Iron Chef’s Cat Cora is expecting her third–and fourth–sons! Cat will give birth three months after her wife, Jennifer Cora, 37. Their four children have the same sperm donor.  Cat says,” Jennifer carried my embryo and I carried hers. It’s like surrogating, but obviously all of our kids are equal.
